 December is Free Choice month for the Cake Slice Bakers, and I was having such a hard time deciding that I decided to bake the cake with the longest name - not really. I did have a hard time choosing, but then my daughter needed to bring a dessert to a holiday party, and these cupcakes seemed like the perfect option. The recipe starts with a simple chocolate cupcake recipe. While the cupcakes are cooking, you make a dark chocolate ganache. The recipe gives instructions for making it on the stove, but I used my microwave. While that cools, you turn your attention to the filling which is basically homemade marshmallow cream flavored with raspberry jam. I didn't have any raspberry jam on hand, but I did have barely used jar of something called BEAR jam - Blackberry, Elderberry, Apple, Raspberry - that we had picked up at a farm stand. Chocolate Malt Cake #CakeSliceBakers

 New year, new cake book!  This year the Cake Slice Bakers are baking from Everyday Little Cakes  by Candace Floyd.  Apparently there are folks who struggle with leftover cake - not a problem we have with 2 teenaged boys in our house - so she's designed recipes for smaller cakes.  The one I chose for January is baked in 2 6-inch pans instead of the 8-inch pans most recipes call for.  And if you think two inches shouldn't make a big difference in size, let me tell you it does!  A normal 8-inch layer cake is enough for our family for 2 meals, sometimes with a bit left over.  The 6-inch layer cake was enough for one meal with a bit leftover.  As my younger son pointed out, that just means I need to bake more cakes! To give some reference for size comparisons, in the picture below the cake is sitting on a standard Corelle plate. Lemon, Ricotta, Thyme Mini-Loaves #CakeSliceBakers

My Cake Slice Bakers pick for April was the Lemon, Ricotta, Thyme Mini-Loaves.  Fortunately, I baked these in March when I could still had easy access to most baking goods.  They were really moist loaves with just the right amount of lemon flavoring.  The recipe says that it should make 8 mini loaves.  All I can think is her mini loaf pans must be must smaller than mine because I only got 3 out of the recipe.   Each loaf was the right amount for our family of 5 to each have a slice or two after dinner. Each month The Cake Slice Bakers are offered a selection of cakes from the current book we are baking through. This year it is The New Way To Cake  by Benjamina Ebuehi. We each choose one cake to bake, and then on the 20th - never before - we all post about our cake on our blogs.
