Olive Oil Cake #CakeSliceBakers
February required an easy cake that I didn't need to collect any special ingredients for. Luckily, the Olive Oil cake was one my choices. It's flavored with a lemon and an orange, both of which I already had in my house, and the other ingredients are all household staples for us.
It was an easy cake to make. And baked up beautifully.
The cake was extremely moist and had just the right touch of citrus.
Unfortunately, we were not big fans of the olive oil taste in the cake. I've not made an olive oil cake before, so I don't know if this is just a preference or if it was a result of the type of olive oil I used or how long it had been in my cupboard. I also wonder how the cake would taste if I made it with a more neutral tasting oil.

ReplyDeleteI have made olive oil cakes and they do have a distinctly different taste. I like it and enjoyed it very much but I just wanted to assure you that it was nothing that you did and that the olive oil was fine.
ReplyDeleteReally looks great. I used a really fresh extra-virgin olive oil and couldn't taste it like I thought I would. Or maybe I put so much citrus zest that it covered up the oil flavor!! :)
ReplyDeleteThe crumb on the cake is perfect! I don't love strong olive oil flavor in cakes either-- I'll take your advice and try it with a more neutral oil.
