Coconut-Candy Bar Cake #CakeSliceBakers

For 2022, The Cake Slice Bakers are baking from Zoe Bakes Cakes, and the first month gave me the option of baking something that sounded like a sure winner in our household - a Coconut-Candy Bar Cake.  It has coconut cake layers with a German chocolate-like coconut filling between the cake layers, all topped with a bittersweet chocolate ganache.  


Unfortunately, this cake was not all I had hoped it would be.  The cake layers themselves were delicious. There were moist and had a nice coconut taste without being overwhelming.  The filling, however, was far too sweet, and the ganache topping just didn't seem to go along with the rest of the cake even though chocolate and coconut are usually a winning pair.


This cake had the unlooked for distinction of having almost half go down the garbage disposal as no one other than me was willing to try another piece the next day.  I think the filling would have worked better with unsweetened coconut, and it's possible with less sweetness in the middle, the ganache would have felt more a part of the entire dessert.





Each month The Cake Slice Bakers are offered a selection of cakes from the current book we are baking through. This year it is Zoë Bakes Cakes by Zoē François. We each choose one cake to bake, and then on the 20th - never before - we all post about our cake on our blogs. There are a few rules that we follow, but the most important ones are to have fun and enjoy baking & eating cakes!

  1. Bummer that you didn't like it!! I think maybe a chocolate filling would be better, or even almonds (like Almond Joy). We do have to toss a lot of it only because there are only two of us.
